स्वास्थ्य के दृष्टिकोण से पौष्टिक भोजन का विशेष महत्व है. लेकिन शरीर का पोषण और ऊर्जा देने वाले खाद्य पदार्थों का सेवन गलत समय और गलत तरीके से किया जाए तो शरीर पर उसका प्रतिकूल असर भी पड़ सकता है. आयुर्वेद में वर्णित विरुद्ध आहार की अनूठी अवधारणा खान-पान की ऐसी ही विसंगतियों के बारे में बताती है. विरुद्ध आहार का अभिप्राय ऐसे दो भोजन या खाद्य पदार्थ से है जिसका एकसाथ सेवन करना स्वास्थ्य के दृष्टिकोण से हानिकारक सिद्ध हो सकता है. इसके अलावा गलत समय, गलत खुराक और गलत मौसम में भोजन का सेवन भी विरुद्ध आहार का कारण बन सकता है. विरुद्ध आहार कई तरह के रोगों जैसे त्वचा रोग, बवासीर, जुकाम, मधुमेह आदि का कारण बन सकता है. आइये जानते हैं कुछ ऐसे खाद्य पदार्थों के बारे में जिनका एक साथ सेवन विरुद्ध आहार का कारण बन सकता है -

भोजन के साथ फल : फलों का सेवन उत्तम स्वास्थ्य के लिए जरुरी है. लेकिन फलों के सेवन को लेकर कई तरह के सवाल आम लोगों के मन में उठते रहते हैं. मसलन, क्या फलों को भोजन के साथ लेना सही है? इसी तरह, क्या फलों का सेवन खाली पेट करना चाहिए या भोजन से कम से कम 30-40 मिनट पहले करना चाहिए? आयुर्वेद की माने तो यह वास्तव में फल की प्रकृति और व्यक्ति की पाचन शक्ति पर निर्भर करता है। फलों का सेवन भोजन के दौरान या भोजन से पहले या बाद में और साथ ही व्यक्ति के पाचन के अनुसार किया जा सकता है। भोजन के क्रम में पहले मीठे पदार्थों का सेवन करना चाहिए, उसके बाद खट्टा, नमकीन, तीखे, कड़वे और कसैला फलों का स्वाद लेना चाहिए। इसलिए मीठे फलों को भोजन के पहले भाग में शामिल किया जा सकता है।
फल के साथ दूध - दही : मीठे फलों के साथ दूध लेना ठीक है और इसका स्वास्थ्य पर कोई दुष्प्रभाव नहीं पड़ता। लेकिन खट्टे फल के साथ दूध से परहेज करना बेहतर है। आयुर्वेद के अनुसार किसी भी डेयरी प्रोडक्ट के साथ खट्टा फल नहीं खाने की सलाह दी जाती है क्योंकि यह पाचन को प्रभावित कर सकता है। साथ ही शरीर में विषाक्त पदार्थों का उत्पादन कर सकता है। साइनस, सर्दी-खांसी और एलर्जी का यह कारण बन सकता है।
मछली और दूध : आयुर्वेद में मछली और दूध का सेवन एक साथ करने की सख्त मनाही है. दोनों के एकसाथ सेवन से अपच और त्वचा रोग हो सकता है। इन दोनों की प्रकृति अलग - अलग होती है। दूध ठंडा होता है और मछलियाँ गर्म। इन्हें एक साथ लेने से दोष उत्पन्न होता है जिससे त्वचा रोग होने की संभावना प्रबल हो जाती है।
केला और दूध : आयुर्वेद में केला और दूध को एक साथ खाने की सलाह नहीं दी जाती है। आयुर्वेद इस संयोजन को विष के समान मानता है। ऐसा कहा जाता है कि यह शरीर में भारीपन पैदा करता है और दिमाग को धीमा कर देता है। लेकिन इसके बावजूद केला और दूध आपका प्रिय भोजन है तो यह सुनिश्चित करें कि केला बहुत पका हुआ हो। साथ ही पाचन संबंधी विकारों से बचने के लिए उसमें इलायची और जायफल मिला ले तो बेहतर होगा।
दही के सेवन का समय : दही का सेवन हमेशा दिन के समय करना चाहिए। रात के समय दही के सेवन से बचें। इससे कफ की प्रवृति बढ़ने की संभावना रहती है। साथ ही दही को गर्म नहीं करना चाहिए क्योंकि गर्म करने से दही के गुण खत्म हो जाते हैं। मोटापे, कफ रोग और रक्तस्राव विकारों और सूजन संबंधी बीमारियों वाले लोगों को इससे बचना चाहिए। खट्टे दही से बचना चाहिए क्योंकि इससे गैस्ट्राइटिस हो सकता है।
दूध और चावल : दूध और चावल को एक साथ लिया जा सकता है लेकिन इसका भी एक तरीका है. यदि पके हुए चावल को दूध के साथ मिलाकर सेवन किया जाए तो कोई नुकसान नहीं होता. दूध और चावल के साथ नमक का प्रयोग वर्जित है क्योंकि इससे अपच की समस्या हो सकती है।
मीठे खाद्य पदार्थ : रात के समय मीठे खाद्य पदार्थों के सेवन से बचना बेहतर है क्योंकि इससे कफ दोष बढ़ सकता है।
सब्जियां और दूध : हरी पत्तेदार सब्जियों और मूली का सेवन करने के बाद दूध पीने से बचना चाहिए। इससे अपच, त्वचा का रंग फीका पड़ना और त्वचा रोग हो सकते हैं।

New Delhi, Sep 6 (IANS) Chandigarh now has its first pollen calendar, which can identify potential allergy triggers and provide a clear understanding for clinicians as well as allergy sufferers about their causes to help limit their exposure during high pollen loads.About 20-30 per cent of the population suffers from allergic rhinitis/hay fever in India, and approximately 15 per cent develop asthma. Pollens are considered major outdoor airborne allergens responsible for allergic rhinitis, asthma, and atopic dermatitis in humans."Pollen calendars represent the time dynamics of airborne pollen taxa in graphical form in a particular geographical area. They yield readily accessible visual details about various airborne pollen taxa present throughout the year, with their seasonality in a single picture. Pollen calendars are location-specific, with concentrations closely related to locally distributed flora," a Science and Technology Ministry release said.People can have access to the Pollen Calendar of Chandigarh through the website: https://www.care4cleanair.com/champ.The Department of Community Medicine and School of Public Health, PGIMER, Chandigarh, examined the seasonal periodicities of airborne pollen spectrum to develop the 'Pollen Calendar'. Led by Dr Ravindra Khaiwal of the Department, the team also included Professor, and Head of PGIMER's Department of Pulmonary Medicine, Dr Ashutosh Aggarwal, and Panjab University, Chandigarh, Department of Environment Studies, Chairperson and Associate Professor Dr Suman Mor, along with researchers Akshi Goyal and Sahil Kumar.The group explored the main pollen seasons, their intensities, variations, and aerobiologically significant pollen types in Chandigarh. The prominent airborne pollen dominating seasons were spring and autumn, with maximum species surfacing when the phenological and meteorological parameters are considered favourable.The calendar will help prepare early advisories and disseminate them through media channels to the citizens so that they can use protective gear during the period when the concentration of allergic pollens will be high. It is also a preventive tool for sensitive people to diminish exposure when the levels of aero-pollen are high during specific periods.The study, supported by the Department of Science and Technology, was recently published in journal Atmospheric Environment.Khaiwal said that Chandigarh had reported a remarkable increase in forest cover in recent years, and rise in green spaces would also increase airborne pollen, consequently increasing pollen-related allergic ailments.Mor said: "In this scenario, the study aims to bring airborne pollen seasonal information to the susceptible population, healthcare professionals, policymakers, and scientists to be familiar with the current changes in the environment, which can further help develop mitigation strategies." Nairobi, Aug 18 (IANS) Kenya Red Cross Society said Tuesday that 2.1 million Kenyans are currently facing high acute food insecurity, up from 1.4 million in February due to a worsening drought situation.Asha Mohammed, secretary-general of Kenya Red Cross Society, said that the affected people are in 12 semi-arid and arid counties of the country, the Xinhua news agency reported."The worsening food and nutrition situation is mainly attributed to the poor performance of the October-November-December 2020 and March-April-May rains," Mohammed said, adding that unless urgent multi-sectoral interventions are implemented, the food insecurity situation will get out of hand and affect a total of 20 counties.According to the organisation, the drought-affected counties have had no significant harvest, as most water points such as boreholes, wells and water pans have dried up, increasing distances that people travel looking for water for domestic and livestock use.Mohammed observed that the general lack of water and grazing pasture is fuelling migration and resource-based conflicts while rates of malnutrition in the northeastern part of the country are on the increase.Projections based on weather forecasts indicate that the ongoing drought will persist until early 2022 since climate forecasts for the upcoming short rains beginning in October indicate below-average rains in the water-stressed areas.--IANSint/arm
Chandigarh, Aug 17 (IANS) In a first-of-its kind in India, a team of researchers have conducted a study to examine the seasonal periodicities of airborne pollen spectrum and developed a pollen calendar for the city that can turn into big help for millions who suffer from related allergies.Pollen is released by plants, making millions of people suffer from hay fever, pollinosis and allergic rhinitis.The group of scientists from Post Graduate Institute of Medical Education and Research (PGIMER) and Panjab University, both in Chandigarh, has explored the main pollen seasons, their intensities, variations and aerobiologically significant pollen types in Chandigarh.Pollen grains are male biological structures with the primary role of fertilization, but when inhaled by humans, they may strain the respiratory system and cause allergies.They are found suspended in the air and cause widespread upper respiratory tract and naso-bronchial allergy with manifestations like asthma, seasonal rhinitis, and bronchial irritation.About 20-30 per cent of the population suffers from allergic rhinitis or hay fever in India, and approximately 15 per cent develop asthma. New Delhi, Aug 2 (IANS) The Alliance for Sustainable and Holistic Agriculture (ASHA) - Kisan Swaraj has written to the Food Safety and Standards Authority of India (FSSAI) to abort the plan to make synthetic/chemical fortification of foods mandatory in India.Earlier, the FSSAI had issued a draft regulation for mandatory fortification of edible oil and milk with Vitamin A and D. The FSSAI has also outlined its plan to make rice fortification mandatory from 2024 with Vitamin B12, Iron, and Folic Acid in India.ASHA - Kisan Swaraj has sent a letter to the FSSAI that carries the signatures of medical experts, nutritionists, agricultural scientists, farmers' organisations, academics, civil society organisations across the society to stop any such plan of food fortification.The government has recently initiated a 3-year centrally sponsored pilot scheme on rice fortification and supply via PDS in 15 districts of the country. The ASHA - Kisan Swaraj claimed that the government has started to provide fortified rice through the mid-day meal scheme and ICDS programme citing widespread nutritional deficiencies since April.Responding to a letter from civil society groups earlier, the FSSAI held food fortification just as complementary strategy to diverse diets. "If FSSAI really saw fortification as a complementary strategy, then how it has become mandatory now while dietary diversity and other holistic approaches to malnutrition are optional," the letter mentioned.The activists claimed that FSSAI's intentions are questionable since it has cited industry-funded studies to justify fortification on a national scale, willfully ignoring conflict of interest since those very entities stand most to profit from such a policy."It is ridiculous that the government is promoting polished rice, which has lost a lot of its nutrition on the one hand, and talks about chemical fortification on the other hand," said Dr. Debal Deb, ecologist and traditional rice conservator. Adding one or two synthetic chemical vitamins and minerals will not solve the larger problem, instead, it can lead to the toxicity, including gut inflammation, highlights the letter.--IANSapr/pgh
